Freshly Made! The Allure of New Sake

The brewing of new sake at TUZYUN SHUZO runs from December to early March, starting with the washing of the sake making equipment in October. The first sake brewed and pressed is released around December 10 as 'Hajimeno Ippon' (initial bottle). A harvest festival usually held on October 10, in which visitors can experience harvesting sake rice, also has a picnic party following the harvest. Many people from outside the Kumamoto area come to the festival, as the rice they harvest will be used to make next year's sake.  “This year’s rice turned out great, thanks to the nice weather with all the sunshine we’ve had," added President Yamashita. Already, we're looking forward to next year's new sake!
